Based on the principle of local production and consumption, we serve dishes made with fresh ingredients from the mountains and fields, such as rice grown in the terraced fields right in front of us, natural Japanese pepper leaves and Japanese mint grown on the property, and bamboo shoots harvested in the mountains here.The oranges and ripe kabosu used in the ponzu sauce, as well as the green yuzu and green pepper condiments, are all sourced from the mountains and make use of the bounty of nature, and we cherish the richness of the local environment.
